Yummy Broccoli Recipes

Broccoli has long suffered a bad reputation amongst children as being a tasteless and overly healthy vegetable. Parents have trouble incorporating into their children’s diet without losing its nutritional value. Below are two simple, delicious, yet nutritional dishes you can serve to children without expecting tantrums in return.

BROCCOLI TATER TOTS

Ingredients –

  • 2 cups chopped broccoli that has been blanched for 3 minutes in boiling water and then drained.
  • 1 egg
  • 1/3 cup grated cheese
  • 2/3 cup breadcrumbs
  • salt and pepper to taste

Method –

  • Finely dice the blanched broccoli. If you find it easier, pulse the broccoli in a blender jar until it resembles a rice-like texture.
  • Mix together the broccoli along with the rest of the ingredients and combine well.
  • Shape the mixture into small ‘tots’, each using around 1 ½ tsp of mixture.
  • To create a ‘tot’, shape the mixture into a ball and then flatten the top and bottom gently. Use the palms of your hands to flatten the sides lightly as well.
  • Line a baking sheet with foil or baking parchment and line the tots up, leaving a small gap between each. Bake in the oven at 180 degrees for 25 minute or until they are crispy.
  • Turn them over half-way through cooking time to ensure even browning.

BROCCOLI PESTO

Ingredients –

  • 2 cups of broccoli, blanched in boiling water for 2 minutes and then drained
  • ½ cup of almonds or walnuts
  • ¼ cup of olive oil
  • ¼ cup of parmesan cheese
  • salt and pepper to taste

Method –

  • Blend all the ingredients together in a blender jar until you have a smooth paste.
  • Use this pesto smeared on to toast, mixed into boiled pasta or even as a healthy dipping sauce for your children.
