Summer is upon us and everyone's appetites go out the window. The heat gets you craving fresh, light food and children end up craving ice cold lollies. Don't fall prey to getting desperate and throwing store-bought ice cream at them. Why not try to make your own? The benefits of doing this include knowing EXACTLY what has gone into your ice lolly (no preservatives and extra sugar!)

There are many different kinds of lollies you can make, ranging from ones with a creamy texture to lighter fruit and water based ones. Here are a couple of combinations you can try!

Orange + sweet lime + carrot

Loaded with Vitamin C, these lollies are the colour of sunshine! Finely grate 6 carrots and squeeze their juice through a fine cloth. Alternatively, you can use cold pressed carrot juice. Add the juice of one orange and one sweet lime. Top up with water if needed, you should have 360 ml of juice in all.

Freeze into 6 lolly moulds, each should have about 60 ml of juice in. De-mould when they're done and enjoy a fresh frozen treat!

Mango + banana + coconut

These ice lollies taste like a blast of tropical goodness. With mangoes in season, you can choose from a whole bunch of varieties, depending on your taste. The coconut milk brings together the mix, making them brightly flavoured yet creamy – perfect for an after dinner treat.

Combine together a banana, the flesh of one mango and 6 tablespoons of coconut milk in a blender. Add honey based on your personal preferences and on how sweet the mangoes are. Again, you should have about 360 ml of liquid that can be divided equally between 6 ice lolly moulds. De-mould when they're frozen solid and enjoy the tropics in a bar!

It's difficult to gauge how long the lollies will take to freeze as temperatures vary from freezer to freezer. Ideally, give yourself at least 5 hours for the lollies to freeze solid.
